Cheesy Stuffed Mushrooms
WINTER WARMING SIDE DISH
Simple to prepare and deliciously cheesy!
- 2 large flat mushrooms
- 100g cream cheese
- 1/4 red capcicum
- 1 spring onion
- pine nuts
Spices and Seasoning
- Freshly ground pepper to taste
- Preheat smoker to 350°F/180°C (or BBQ or oven).
Clean mushrooms and remove the stem.
Finely dice the red capsicum and spring onion.
Mix together the diced red capsicum, spring onions, pinenuts, cream cheese and cracked pepper to taste.
Place the mushrooms upside down on a lined tray and fill with the cream cheese mixture.
Cook until mushroom is cooked and slightly browned on top. Depending on the size of the mushroom, this should take around 20 to 30 minutes.
Omit capsicum and spring onions and try adding sundried tomatoes and fresh basil. Delicious!
